I've never really had the urge to mix peanut butter with anything warmer than a toasted bagel, much less tomatoes, carrots, onions, peppers, tofu and rice. But last night, that's exactly what I did.

My boyfriend, Logan, taught me the recipe a few months ago, and I've been meaning to try my hand at it for a while, if not to learn a new recipe, than to at least prove to him that the dish isn't supposed to be peanut-butter overwhelmed.

There are plenty of different recipes online, but this is my version, sans shortening. In a frying pan, add: white onions (1), peppers (2), carrots (4), tomatoes (1 can chopped or pur©e), peanut butter (3/4 cup), tofu (1 package)—in that order. Season with chili powder, red pepper, cumin and garam masala, an Indian spice blend, which in my opinion, made the dish. The outcome filled a large pot, which fed a hungry man, me and left a little for lunch the next day.

We used instant whole-grain rice instead of white, which worked perfectly fine, and tasted delicious mixed with the Gold Coast sauce. I recommend eating the stew with the rice though, if possible—it definitely finishes the dish. Some people substitute the tofu for chicken, but personally, I don't really think the stew needed another flavor, just protein and something to soak up all the sauce. Your call!–Brynn Mannino
